The self-sufficient country house of Mexico’s star chef Enrique Olvera captivates with its restraint. Enrique Olvera loves clay. He also appreciates wood, a renewable building material, and generally local materials that stand on their own and don’t need a disguise. It has to be the regional, the good and the simple, in architecture and also in the culinary arts. Like the menus that Olvera and his team have been conjuring up for 22 years at Pujol in Mexico City, one of the best restaurants in the world.
